This week Allen Smith and the Mount Gay team from Barbados demonstrated at the Hoxton Holborn Hotel in London how to blend rum. By no means an easy task, as we learn while being talked through aromas, flavours and different stages of the ageing process that the rum goes through before being blended by someone as skilful as Allen.
Mount Gay has been producing rum since 1703 and the brand's long history has now culminated in an ever so exquisite limited rum blend using single column and double copper pot distillate: the XO Cask Strength. The XO Cask Strength has been released (only 3,000 available worldwide) to celebrate 50 years of Bajan Independence. It is available at Selfridges at a £ 150 per bottle that is sure to not only please but astonish the finest of tastebuds.
Only the finest of sugar cane molasses and pure water from Barbados are used for the production of all Mount Gay rums, which are matured in toasted oak barrels to achieve their distinctive aroma and refined character.
